Grilled Chicken & Veggie Skewers

These grilled chicken and veggie kabobs are an easy way to enjoy a balanced, flavorful meal. Made with lean protein, fresh vegetables and a light homemade marinade, they’re perfect for weeknight dinners or weekend cookouts. With a mix of color, crunch and nutrients, this dish is a feel-good favorite any time of year!

Ingredients:

For the marinade:

  • Boneless, skinless chicken breasts
  • Olive oil
  • Red wine vinegar
  • Honey
  • Italian seasoning
  • Four cloves of garlic
  • Salt
  • Pepper

For the veggies:

  • Zucchini and yellow summer squash cut into 1/2-inch coins
  • Bell peppers, cored and cut into 1-inch pieces
  • Red onions, quartered, then cut into 1-inch pieces
  • Cherry tomatoes

Garnishes:

  • Lemon juice
  • Fresh herbs
  • Feta cheese

Directions:

  • Cut the chicken into bite-sized pieces and whisk the marinade ingredients together.
  • Add the marinade to a bowl or plastic bag with the chicken. Let the chicken marinate, and soak the skewers.
  • Place the chicken and vegetables on the skewers.
  • Grill the kabobs over medium-high heat (about 375 degrees F), until the chicken is cooked through. 
  • Garnish with lemon juice, fresh herbs and feta cheese, and enjoy!
