
These grilled chicken and veggie kabobs are an easy way to enjoy a balanced, flavorful meal. Made with lean protein, fresh vegetables and a light homemade marinade, they’re perfect for weeknight dinners or weekend cookouts. With a mix of color, crunch and nutrients, this dish is a feel-good favorite any time of year!
Ingredients:
For the marinade:
- Boneless, skinless chicken breasts
- Olive oil
- Red wine vinegar
- Honey
- Italian seasoning
- Four cloves of garlic
- Salt
- Pepper
For the veggies:
- Zucchini and yellow summer squash cut into 1/2-inch coins
- Bell peppers, cored and cut into 1-inch pieces
- Red onions, quartered, then cut into 1-inch pieces
- Cherry tomatoes
Garnishes:
- Lemon juice
- Fresh herbs
- Feta cheese
Directions:
- Cut the chicken into bite-sized pieces and whisk the marinade ingredients together.
- Add the marinade to a bowl or plastic bag with the chicken. Let the chicken marinate, and soak the skewers.
- Place the chicken and vegetables on the skewers.
- Grill the kabobs over medium-high heat (about 375 degrees F), until the chicken is cooked through.
- Garnish with lemon juice, fresh herbs and feta cheese, and enjoy!
