Mouth-Healthy Recipe: Leftover Turkey Soup

Turkey Soup

Make the most of your Thanksgiving leftovers with this nourishing turkey soup. Loaded with vegetables and lean protein, it’s the perfect post-holiday meal for your health-conscious family. The warm broth also helps keep you hydrated and can be soothing for digestion after indulgent holiday meals.

Ingredients:

  • 2 cups cooked turkey, shredded
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken or turkey broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper, to taste
  • 1 cup whole-grain pasta or quinoa (optional)

Directions:

  1. Heat olive oil in a large pot over medium heat. Sauté onion, garlic, carrots, and celery until softened.
  2. Add broth, thyme, and parsley. Bring to a boil, then reduce heat and simmer 10 minutes.
  3. Stir in turkey and pasta/quinoa if using. Simmer 8–10 minutes until heated through and pasta is cooked.
  4. Season with salt and pepper. Serve warm.
