Ingredients:
- 2 cups cooked turkey, shredded
- 1 tbsp olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 celery stalks, sliced
- 3 cloves garlic, minced
- 6 cups low-sodium chicken or turkey broth
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper, to taste
- 1 cup whole-grain pasta or quinoa (optional)
Directions:
- Heat olive oil in a large pot over medium heat. Sauté onion, garlic, carrots, and celery until softened.
- Add broth, thyme, and parsley. Bring to a boil, then reduce heat and simmer 10 minutes.
- Stir in turkey and pasta/quinoa if using. Simmer 8–10 minutes until heated through and pasta is cooked.
- Season with salt and pepper. Serve warm.
