Tomato and Fennel Salad

Ingredients:

  1. 1 tablespoon extra-virgin olive oil
  2. 1 tablespoon white-wine vinegar
  3. ½ teaspoon salt
  4. 1 pound of tomatoes
  5. 2 cups fennel bulb
  6. ¼ cup parsley
  7. ⅓ cup toasted pine nuts
  8. Freshly ground black pepper (to taste)

Directions:

  1. Cut the tomatoes into wedges.
  2. Thinly slice the fennel bulb.
