Cucumber and Dill Salad

This crisp cucumber and dill salad is the perfect way to cool down and fuel your body. Cucumbers are over 95% water and naturally low in calories, making them a refreshing choice for hydration and digestion. Paired with dill and a splash of rice vinegar, this light salad is as flavorful as it is nourishing.

Ingredients:

  • 1 to 2 large cucumbers 
  • 1 to 2 tablespoons chopped fresh dill
  • 2 to 3 tablespoons seasoned rice vinegar
  • Salt and pepper to taste

Directions:

  • Quarter the cucumbers lengthwise, then slice crosswise.
  • Combine all ingredients in a bowl and toss to coat.
  • Serve this immediately or make ahead (up to a couple of hours) and chill.
