- Spring greens
- Roasted Butternut Squash
- Pecans
- Pepitas (pumpkin seeds)
- Feta cheese
- Pomegranate arils
- Red onion
- Shredded or diced chicken (optional)
For the Honey Cider Vinaigrette Dressing
- Apple cider
- Honey
- Apple cider vinegar
- Extra virgin olive oil
- Salt and pepper
Directions
- Prepare your dressing: Place apple cider, honey, vinegar, salt and pepper in a blender and blend until honey is incorporated into mixture. With lid on and blender speed running on low, slowly drizzle in the oil in a small steady stream until fully incorporated.
