Mouth-Healthy Recipe: Fall Harvest Salad

Ingredients

For the Salad

  • Spring greens
  • Roasted Butternut Squash
  • Pecans
  • Pepitas (pumpkin seeds)
  • Feta cheese
  • Pomegranate arils
  • Red onion
  • Shredded or diced chicken (optional)

For the Honey Cider Vinaigrette Dressing

  • Apple cider
  • Honey
  • Apple cider vinegar
  • Extra virgin olive oil
  • Salt and pepper

Directions

  1. Prepare your dressing: Place apple cider, honey, vinegar, salt and pepper in a blender and blend until honey is incorporated into mixture. With lid on and blender speed running on low, slowly drizzle in the oil in a small steady stream until fully incorporated.
  2. Assemble your salad: Place greens in large serving bowl and top with everything else. Toss with dressing and enjoy.
