Zucchini Carrot Bread Â
No one will know this lightly sweet loaf is loaded with extra veggies that are a bonus for your taste buds and your health.
Ingredients
- 1 cup unsweetened applesauceÂ
- ¾ cup shredded carrotsÂ
- ¾ cup shredded peeled zucchiniÂ
- ½ cup sugarÂ
- 2 large eggs, room temperatureÂ
- 1½  teaspoons pumpkin pie spiceÂ
- 1 teaspoon ground cinnamonÂ
- ½ teaspoon ground nutmegÂ
- 3 cups all-purpose flourÂ
- 1 tablespoon baking powderÂ
- ½ teaspoon baking sodaÂ
- ½ teaspoon saltÂ
- ¾ cup orange juiceÂ
- Optional: ½ cup walnuts
Directions:
- Preheat oven to 350ËšF. Â
- Combine the first 8 ingredients in a bowl.Â
- Mix flour, baking powder, baking soda, and salt in small bowl.Â
- Gradually mix the dry ingredients into the carrot and zucchini mixture, adding orange juice as you go. Â
- Pour into 2 greased and floured 8×4-inch loaf pans.Â
- Bake until a toothpick inserted in the center comes out clean, about 45 minutes.Â
- Cool for 10 minutes; remove from pans to a wire rack to cool completely.Â
