Tomato & Mozzarella Sandwiches

For a refreshing and quick summer lunch, not much can beat the tang of ripe tomatoes combined with creamy chunks of mozzarella cheese. With just a few minutes and a handful of ingredients, you’ll have a tasty meal that also provides your teeth with a healthy dose of calcium.

Ingredients

½ cup salsa
8 slices of Tuscan bread, ½” thick
2 medium ripe tomatoes
8 ounces of fresh mozzarella, cut into 8 slices

Directions

Spread one tablespoon of salsa on each slice of bread. Then arrange two slices of tomato and two slices of cheese on each of the four bread slices. Place the remaining slices of bread, salsa-side down, on top. Slice each sandwich in half to serve.
